Harvest Note
After a manual harvest, grains are carefully separated from the stalks by a crusher and carried to stainless steel tanks. Alcoholic fermentation is done with select yeast for 7 days and regular pump overs take place at a temperature between 79 - 82 degrees Fahrenheit. Maceration is extended for 10 days.
Tasting Note
Intense red fruit aromas, specifically plum, with hints of vanilla and a subtle trace of coffee. Young, bright and explosive in the mouth. To be served 59 to 61 degrees Fahrenheit.
