Harvest Note
Malbec and Cabernet Sauvignon were hand picked during the first 15 days of April, when grape maturity was reached. They were carried to the winery in boxes to minimize damage and refrigerated for 24 hours. Clusters were classified in sorting tables, destemmed and gravity fed into small concrete tanks and spontaneously fermented by the native yeasts of our terroir. During fermentation, regular punch downs and pump overs are done to improve aroma, color and tannin extractions. Malbec vatting lasted 32 days and Cabernet Sauvignon vatting lasted 27 days. Malolactic fermentation occurred spontaneously in tanks and then the barrels were filled to begin the aging process. Finally it was bottled and stored in the cellar before being released to the market.
Tasting Note
Brilliant ruby red in color. Fresh fruit aromas on the nose, cherry, blackberry, guava and a touch of bay leaves with oak wood notes coming through to provide aromatic complexity. Full bodied and superb structure on the palate with a complex finish. Excellent acidity and great aging potential. Recommended to decant before drinking it cold. Can be cellared for over 10 years.
