Les Clavelles is an estate grown single parcel of powerful and extremely nuanced Grenache Noir. After years of careful selection, this plot was identified for its unique ability to express the terroir of Châteauneuf-du-Pape within a single varietal. With a gentle southwest-facing slope, these vines benefit from direct sunlight in the late afternoon and the famed Mistral winds from the North. The grapes are hand-picked and hand-sorted before fermentation in wooden tanks. Pumpovers and punchdowns occur daily during fermentation to ensure optimal extraction of the grapes’ essence. Maceration lasts 3 weeks before aging, which occurs for 12 months in new French oak barrels.
On the nose expect intense fragrances of Asian spices and ripe red and dark berries. As subtle and nuanced as Grenache Noir can be, this Cuvée features elegance, power, exceptional depth and vibrant energy. The finish is both smooth and solid, showcasing the minerality of this unique parcel.
Pair with rich flavors like braised meats, beef stew, and aged, hard cheeses.
